Greek Pasta Salad

Serves: 6Prep Time: 15 MinutesCooking Time: 20 MinutesIngredients:

300g spiral pasta1 small red capsicum, diced1 small yellow capsicum, diced10 semi sun-dried tomatoes, diced1/2 cup Kalamata olives1/2 red onion, diced15 basil leaves, finely shredded¼ cup marinated artichokes¼ cup feta cheese, crumbled125g can John West Salmon Slices – Smoked

Dressing:2 tablespoons olive oil2 tablespoons rice wine vinegar2 x 85g cans John West Smoked Oysters in Oil (optional)

Directions:

Cook pasta following packet instructions. Drain and cool.

Add cooked pasta and remaining ingredients, except John West Salmon Slices, into a large mixing bowl and mix well. This is your base for the pasta salad. Here you can add any other ingredients that you like (for example, cherry tomatoes, fresh oregano etc).

In a small blender, add all the dressing ingredients together and blend. Pour over salad and season to taste. Top with salmon slices and serve.
