POTATO GEM PIES
Ingredients:
– 1 x Arnott’s Shapes Four’n Twenty Classic Meat Pie Cracker Biscuits
– 1kg potato gems
– 250g beef mince
– 1/2 brown onion, diced
– 1 beef stock cube
– 2 tbsp tomato sauce
– 1 tbsp Worcestershire sauce
– 200g shredded mozzarella
Method:
1. Preheat the oven to 200 degrees Celsius
2. Place 4 potato gems into each muffin or cupcake tray and place in the oven for 10 minutes to soften
3. Meanwhile, make the meat pie filling in a pan on high heat with the onions, beef mince, crumbled beef stock cube, tomato sauce and Worcestershire
4. Remove from the oven and use the back of a glass spice jar to push down on the gems and create a cup-like shape
5. Place 1 tbsp of mince into each cup and top with cheese. Place back in the oven for 15 minutes or until cheese is bubbling brown
6. Remove from the oven and let cool for 2 minutes. Scoop each potato gem pie out with a spoon
7. Top with Arnott’s Shapes Four’n Twenty Classic Meat Pie Cracker Biscuits and enjoy!
