The mayo is optional, as it will give a creamier and less spicy sauce.

You simply alter your various portion sizes, depending on how many you want to feed with the snack.

To make it, chop up the cucumber and carrot into batons and use Lee Kum Kee’s Chiu Chow Style Chilli Oil as a dipping sauce.
