CCTV reveals the moment the rider is hit by the car.
The 35-year-old rider suffered serious leg and head injuries.
“I was inside, and I heard a big noise, so I came outside and saw a guy lying there,” one man told 7NEWS.
Police said they are investigating who was at fault and if the e-bike rider was wearing a helmet. They are also still searching for the Mazda driver.
The rider has undergone surgery and is now in a stable condition.
The incident has infuriated local business owners, who said the intersection has a long history of dangerous crashes.
“This is quite a narrow road, so perhaps opening it up would help,” a local told 7NEWS.
Anyone with information is urged to contact Crime Stoppers.
