EASY CAULIFLOWER CHEESE
Serves: 4

Prep time: 5 minutes
Cook time: 50 minutes
Ingredients
1 whole cauliflower, leaves attached
2 tablespoons olive oil
Sea salt and pepper to taste
2 cups leftover cheddar fondue mixture
Topping
½ cup flat leaf parsley, chopped
¼ cup pickled jalapenos
¼ cup roasted almonds, chopped
Zest and juice of ¼ lemon
¼ cup dill fronds
Method
Step 1: Pre-heat the oven to 180C. Bring a large pot of salted water up to a simmer. Place the cauliflower into the water upside down and leave to gently cook for 10 minutes.
Step 2: Carefully remove the cauliflower from the water and drain off any excess water.
Place into a baking dish and drizzle with oil and a pinch of salt. Cover with foil and bake for 30 minutes.
Step 3: Uncover the cauliflower and place back into the oven for 20 minutes, or until golden on the outside. Pour over the leftover fondue mixture and bake for a further 10 minutes, or until bubbling. Toss together the topping ingredients in a bowl
Step 4: Place the cauliflower onto a serving plate and pour over any extra cheese sauce. Scatter with the topping ingredients before serving.
