CRISPY HOT HONEY CHICKEN DRUMSTICKS

SERVES 4 as a snack

Prep time: 10 minutes

Cook time: 40 minutes

Ingredients

8 Coles chicken drumsticks

2 large eggs, beaten

1 tablespoon hot sauce (Like Franks or Tabasco)

Sea salt and black pepper to taste

6 cups corn flakes (can be gluten free if needed)

1/3 cup Parmesan cheese, grated

1 teaspoon paprika

1 teaspoon fried oregano

1 teaspoon onion powder

1 teaspoon garlic powder

Olive oil for drizzling

Pickles to serve

Hot Honey

1/2 cup honey

40g butter

1 tablespoon hot sauce

1 teaspoon dried chilli flakes

1 tablespoon fresh thyme, chopped

Method

Step 1. Pre heat the oven to 190 degrees C. Pat the chicken drumsticks dry with paper towel. Beat the eggs and hot sauce together in a large bowl, toss through the chicken and set aside.

Step 2. Combine the cornflakes, salt, pepper, Parmesan, paprika, oregano, onion powder and garlic powder in a food processor and blitz until you have fine crumbs.

Step 3. Drain the chicken from the egg mixture and coat in the cornflake crumbs, then repeat through the eggs and cornflake crumb mixture a second time, making sure it has a good coating all over. Arrange the chicken on a lined oven tray and bake for 40 minutes, or until crispy and cooked through.

Step 4. While the chicken is cooking, place the honey, butter, hot sauce and chilli flakes into a small pot and bring up to a gentle simmer to infuse. Take of the heat and stir through the thyme.

Arrange the chicken on a serving platter and drizzle with the hot honey before serving.
