Cocktail of the week: Faber’s elderflower and gooseberry gin fizz – recipe | Cocktails

A very British take on an all-time classic, with the addition of elderflower and gooseberry introducing floral and tart seasonal notes to welcome the start of gooseberry season proper. For an alcohol-free alternative, substitute the gin with 50ml Pentire Adrift.

Elderflower and gooseberry gin fizz

Serves 1

3 fresh gooseberries, plus 1 sliced gooseberry, to finish
15ml elderflower cordial
25ml simple sugar syrup
50ml dry botanical gin
– we use Lantic
Soda water, to top

Put the gooseberries, cordial and sugar syrup in a Boston shaker and muddle gently (ie, bash to break up the fruit a bit). Add the gin and a big handful of ice, then shake and single strain into a highball glass (ideally one filled with crushed ice, if you have it). Top with soda water, garnish with the sliced gooseberry and serve.
