LEMON TWIST BISCUITS

Ingredients

· 4 eggs

· 250g sugar

· 500g self-raising flour

· 1 lemon, zested

· 2 tablespoons lemon juice

· 125g butter, melted

· 2 teaspoons vanilla sugar (or essence)

· 2 teaspoons baking powder

· Extra self-raising flour for dusting

Method

· Whisk eggs in a bowl. Add lemon zest and lemon juice and whisk.

· Add sugar and whisk. Then add melted butter and whisk.

· Add vanilla sugar, baking powder and whisk.

· Add self-raising flour and whisk until combined.

· Dust the benchtop with flour and knead until the dough is springy.

· Slice two small pieces from dough and roll out each piece into a rope (1-2cm wide each)

· Entwine the two pieces of rope dough. Cut off the rough ends.

· Continue until all the dough is used.

· Place on a lined baking tray. Bake in oven at 180°C fan-forced for 30 minutes, or until golden.
