Anna Polyviou cooks a Greek feast

Anna Polyviou is a pastry chef known for creating wacky takes on desserts and creative cakes.

Today she is cooking halloumi hash browns, they are made like regular potato hash browns but you add grated halloumi and parmesan cheese into the mix.

HALLOUMI HASHBROWN, TARAMASALATA & HERBS

2 large potatoes, grate and squeeze out access water.

50g Plain Flour

50g Parmesan

50g Haloumi

50g Butter, melted.

Olive Oli For Frying

Salt & Pepper for seasoning

HOW TO

1. Place all the ingredients into a bowl and mix together.

2. Push into rings, or shape into hash brown shape, place in freezer to firm up and easier to handle.

3. Heat oil in frying pan, fry on both sides, drain on wire rack.
